Sriracha Scented Shrimp On Garlic Baguettes

Ingredients
- 1/3 cup pure olive oil
- 1 tablespoon minced garlic, divided
- 18 to 20 slices French baguette, cut on diagonal 3/4-inch wide
- 1/3 cup butter
- 1 lb. large raw shrimp, peeled and deveined (18/20 ct.)
- 1/4 cup Santa Cruz Organic® Pure Lime Juice
- 1 large very ripe tomato, seeded and chopped
- 3 to 4 tsps. sriracha
- 1 tbsp. fresh chopped cilantro
Directions
- Step 1
ADD olive oil to large skillet. Saute 1 teaspoon garlic in oil. Brown both sides of baguettes in skillet over medium-high heat. Remove from skillet to plate. Tent with foil.
- Step 2
HEAT butter in same skillet over medium heat. Saute shrimp, with lime juice, remaining 2 teaspoons of garlic, tomato and sriracha, 3 to 5 minutes or until shrimp is opaque. Remove pan from heat. Stir in cilantro.
- Step 3
PLACE baguettes on individual plates or platter. Top each with one shrimp. Spoon additional sauce over shrimp.
