Sriracha Scented Shrimp On Garlic Baguettes

Ingredients

  • 1/3 cup pure olive oil
  • 1 tablespoon minced garlic, divided
  • 18 to 20 slices French baguette, cut on diagonal 3/4-inch wide
  • 1/3 cup butter
  • 1 lb. large raw shrimp, peeled and deveined (18/20 ct.)
  • 1/4 cup Santa Cruz Organic┬« Pure Lime Juice
  • 1 large very ripe tomato, seeded and chopped
  • 3 to 4 tsps. sriracha
  • 1 tbsp. fresh chopped cilantro

Directions

  • Step 1

    ADD olive oil to large skillet. Saute 1 teaspoon garlic in oil. Brown both sides of baguettes in skillet over medium-high heat. Remove from skillet to plate. Tent with foil.

  • Step 2

    HEAT butter in same skillet over medium heat. Saute shrimp, with lime juice, remaining 2 teaspoons of garlic, tomato and sriracha, 3 to 5 minutes or until shrimp is opaque. Remove pan from heat. Stir in cilantro.

  • Step 3

    PLACE baguettes on individual plates or platter. Top each with one shrimp. Spoon additional sauce over shrimp.
