Ingredients

  • 1 cup dark brown sugar
  • 3/4 cup butter
  • 1 large egg
  • 1 cup Santa Cruz Organic® Apple Sauce
  • 1 1/2 cups dried fruits like cranberries, banana chips, papaya, pineapple and coconut, coarsely chopped
  • 3/4 cup matchstick carrots, chopped
  • 2 1/2 cups all purpose flour
  • 1/2 cup old-fashioned oats
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 1/2 tsps. pumpkin pie spice*

Directions

  • Step 1

    HEAT oven to 325°F.

  • Step 2

    CREAM brown sugar and butter in large bowl with electric mixer on medium until blended. Stir in egg, apple sauce, dried fruits and carrots. Combine flour, oats, baking soda, salt, and pumpkin spice in separate medium bowl. Blend flour mixture into creamed mixture until well combined.

  • Step 3

    SCOOP heaping tablespoons full of dough onto ungreased baking sheets. Bake 15 to 17 minutes or until golden brown. Cool on baking sheet 2 minutes. Transfer to cooling rack.

  • Step 4

    Pumpkin Pie Spice: To make 1 tablespoon pumpkin pie spice combine 1/2 teaspoon ground cinnamon, 1/4 teaspoon ground ginger, 1/8 teaspoon ground allspice and 1/8 teaspoon ground nutmeg.
