Cinnamon Apple Sauce Snack Cake

  • No-stick cooking spray
  • 1/4 cup butter, softened
  • 2/3 cup dark brown sugar
  • 1 large egg
  • 1 cup Santa Cruz Organic® Apple Sauce
  • 1 cup flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 3/4 cup chopped walnuts
  • 2 tablespoons butter
  • 3 tablespoons almond milk or milk
  • 1/3 cup dark brown sugar
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract


  1. HEAT oven to 350°F. Coat 9-inch square pan with no-stick cooking spray.
  2. For bars: BEAT butter, brown sugar and egg in large bowl with electric mixer, on medium speed, until fluffy. Gradually add apple sauce on low speed. Combine flour, baking soda, salt and cinnamon in separate medium bowl. Add flour mixture to apple sauce mixture. Beat on low speed with electric mixer until blended. Stir in walnuts. Spread batter in prepared pan.
  3. BAKE 19 to 21 minutes or until toothpick placed in center is clean. Cool completely on wire rack.
  4. For frosting: MELT butter in 1 quart saucepan over medium heat. Stir in milk and brown sugar. Boil mixture for one minute stirring constantly. Remove pan from heat. Transfer mixture to medium bowl. Cool 10 minutes. Beat in powdered sugar and vanilla with electric mixer on medium speed until fluffy. Spread over cooled cake. Refrigerate until ready to serve.
