Pomegranate Dressing

  • 3/4 cup R.W. Knudsen Family® Organic Cranberry Pomegranate Flavored Juice Blend
  • 1/4 cup balsamic vinegar
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons Santa Cruz Organic® Pure Lemon Juice
  • 1 tablespoon Dijon mustard
  • Kosher or coarse sea salt and freshly ground black pepper


  1. ADD cranberry-pomegranate juice and balsamic vinegar to small saucepan. Heat to a boil, reduce heat to simmer 5 to 7 minutes, until thickened. Cool.
  2. WHISK cranberry-pomegranate reduction with lemon juice, olive oil, and mustard in small bowl. Season to taste with salt and pepper.
