Ginger-Sweet Potato Soup

  • 3 tablespoons butter
  • 3/4 cup chopped onion
  • 1/2 teaspoon minced garlic
  • 1 pound sweet potatoes, peeled and diced (2 medium)
  • 3 1/2 cups water
  • 3 tablespoons Santa Cruz Organic® 100% Ginger Juice
  • 1 tablespoon packed brown sugar
  • 1/2 teaspoon salt


  1. MELT butter in large saucepan over medium heat. Add onion and garlic; cook 3 minutes, stirring occasionally.
  2. ADD sweet potatoes, water, ginger juice, brown sugar and salt. Bring to a boil over high heat. Reduce heat to medium-low. Simmer, uncovered, 20 minutes or until sweet potato is completely tender.
  3. PLACE mixture in blender container, in batches if necessary. Cover and process until smooth. Pour into serving bowls. Garnish as desired.
